Allow the oven and rotating pizza stone to cool completely after every use and always shut off the gas supply before cleaning or maintenance. Remove flour, crumbs and loose food residue from the cooking chamber with a soft brush or suitable non-abrasive tool, then wipe exterior surfaces with a soft damp cloth and mild detergent and dry thoroughly. Once completely cool, clean the pizza stone by gently brushing or scraping away baked-on residue; do not soak it in water, apply detergent directly to it or place it in a dishwasher, as retained moisture may damage the stone during heating. Keep the rotating mechanism free from accumulated food debris and check that it operates smoothly before cooking without forcing it if obstructed.
