Expand your traditional Kamado with the culinary range of plancha grilling: the fire plate made of solid, 8 mm thick steel, developed for exceptional heat storage. Experience different preparation options with different temperature zones, for all dishes that are not possible on a traditional grill grid. The fire plate is specially designed for the Classic and has a seal to the ceramic edge on the underside. The valve lid of the Classic can be inserted in the middle of the plate. This helps you to optimally control the temperature. As there is a recess on the back of the plate, you do not need to remove the lid of the Classic. The fire plate protrudes about 13 cm beyond the edge of the Classic. This ensures a temperature gradient from the center to the edge. In this way, you can prepare different dishes at the same time on the large surface. You can sear your food in the central "hot zone", while you can slowly bring it to the right core temperature or keep it warm at the edge.The hot plate also has a recess for a GN 1/16 gastronorm container, which serves as a grease drip tray. This makes cleaning much easier.
To clean the MONOLITH grill in the event of heavy soiling or grease deposits on the inside of the ceramic, we recommend heating the ceramic grill to 450°C for 10 minutes so the burned food and other residues/grease easily burn. Then brush the inside with a soft brush, empty the ashtray and simply put your stainless steel grids in the dishwasher. It is extremely important not to leave the grill unattended during this time. Afterwards, the air inlet and outlet valves should be closed and the grill left to cool down.
The felt seal is a wearing part and requires careful handling. When cleaning the grill with a grill brush, make sure that the seal is not damaged. No grease should drip onto the seal, as this can lead to ignition and damage.
The seal can burn at temperatures above 450°C. A replacement felt gasket can be obtained from the trade. To replace, the old seal can be removed with a spatula or ceramic hob scraper. . The adhesive residue can be carefully removed with fine sandpaper. The replacement gasket is self-adhesive and is glued to the edge of the body and lid piece by piece, starting on the back of the grill. It is important to ensure that the seal does not protrude inwards, as this can lead to an increased risk of fire. Care should be taken not to damage the glaze on the outside of the body and lid. Simply clean with a damp cloth. Then dry the appliance thoroughly and pull the cover for the kamado over your appliance.
